Vegan Brunch

I love all meals, but if I had to pick a favorite, it would be be brunch. I just love vegan brunch food - I love scrambles, waffles, omelets, and hash browns. Brunch is usually reserved for weekends and holidays, because no one really has time to make big meals that early on a weekday.

I like to celebrate New Year's Day with a big brunch. After staying up late to watch the ball drop and ringin the new year with champaign and snacks, it's nice to sleep in and then wake up to a big breakfast waiting for me. I like to prepare the food the day before so that I don't have too much to do in the morning.

To help usher in the new year,I've put together list of my favorite vegan brunch recipes – some are mine and some come from friends. These breakfast recipes are also great for Easter, Mother's Day, or any random Sunday when you're craving a savory spread. They're terrific for brinner (breakfast for dinner) too!
